- 600 g Ground lamb
- 1 Onion
- 2 tsp Aleppo pepper
- 0.6 tsp Salt
- 3 cloves Garlic (optional)
- 1 tsp Ground cumin (optional)
- 20 g Parsley (optional)
Method
- Grate the onion and squeeze out its liquid, then knead into the lamb with the garlic, Aleppo pepper, cumin, and salt.
- Rest the mince chilled for 15 minutes, then press onto skewers in long flat kebabs.
- Grill over high heat, turning, until charred and just cooked through, 10 minutes.
- Rest briefly, scatter with parsley, and serve.
