Ingredients

  • 600 g Ground lamb
  • 1 Onion
  • 2 tsp Aleppo pepper
  • 0.6 tsp Salt
  • 3 cloves Garlic (optional)
  • 1 tsp Ground cumin (optional)
  • 20 g Parsley (optional)

Method

  1. Grate the onion and squeeze out its liquid, then knead into the lamb with the garlic, Aleppo pepper, cumin, and salt.
  2. Rest the mince chilled for 15 minutes, then press onto skewers in long flat kebabs.
  3. Grill over high heat, turning, until charred and just cooked through, 10 minutes.
  4. Rest briefly, scatter with parsley, and serve.
