- 200 g Lupin pasta
- 60 g Butter
- 80 g Parmigiano-Reggiano
- 1 tsp Salt
- ½ tsp Black pepper (optional)
Method
- Bring a large pot of water to a boil over high heat and salt it well.
- Finely grate the Parmigiano-Reggiano while the water heats.
- Cook the lupin pasta 5 minutes — one minute shy of the pack's 6. It goes soft fast, so drain it early rather than late.
- Reserve a full mugful of the pasta water, then drain.
- Melt the butter with a ladle of pasta water in a wide skillet over medium heat, swirling into an emulsion.
- Add the pasta to the skillet, then the cheese in handfuls OFF the heat, tossing constantly and loosening with pasta water until glossy.
- Plate immediately with black pepper — alfredo waits for no one.
