- 200 g Almonds
- 50 g Cocoa powder
- 3 Egg
- 80 ml Maple syrup
- 60 ml Extra-virgin olive oil
- 60 g Dark chocolate
- ½ tsp Baking powder
- 1 tsp Vanilla (optional)
Method
- Heat the oven to 175C (350F) and line a small square tin. Blitz the almonds to a fine flour.
- Melt the dark chocolate with the oil and let it cool slightly.
- Whisk the eggs, maple, and vanilla, then stir in the melted chocolate.
- Fold in the almond flour, cocoa, and baking powder until just combined, then scrape into the tin.
- Bake until set at the edges but still fudgy in the center, 20 minutes.
- Cool in the tin before cutting into squares.
