  • 160 g Lupin pasta
  • 100 g Guanciale
  • 140 ml Tomato passata
  • 50 g Pecorino Romano
  • 1 tbsp Salt
  • ½ tsp Red pepper flakes (optional)
  • 60 ml White wine (optional)

Method

  1. Bring a large pot of salted water to a boil.
  2. While the water heats, dice the guanciale.
  3. Cook the guanciale over medium heat until the fat melts out and it turns crisp, then pour in the wine to lift the browned bits from the pan, and add the passata (just enough to coat, not drown) and chilli flakes.
  4. Cook the lupin pasta 5 minutes — one minute shy of the pack's 6. It goes soft fast, so drain it early rather than late.
  5. Reserve a mugful of pasta water, then drain.
  6. Toss the pasta in the sauce with pasta water, then the pecorino off heat.
  7. Serve at once.
