- 3 Egg
- 80 g Avocado
- 1 Low-carb tortillas
- 2 tsp Neutral oil
- ¼ tsp Ground turmeric
- ½ tsp Ground cumin
- ¼ tsp Salt
- 50 g Tomato (optional)
- 8 g Cilantro (optional)
Method
- Beat the eggs with the turmeric, cumin and salt until the yolks have vanished and the whole bowl is one flat gold.
- Dice the tomato small, then crush the avocado with a fork and stir the coriander through it, stopping while there are still lumps.
- Warm the oil in a nonstick pan over a low flame, pour the eggs in and drag them from the edge to the centre with a spatula in long slow sweeps. Take the pan off while they still look wet — they finish setting on the way to the tortilla.
- The eggs want a low flame and no hurry, which leaves room to set the low-carb tortilla in a second dry pan and turn it once, a minute a side, until it is supple.
- Spread the crushed avocado to the edges of the tortilla, spoon the eggs down the middle with the diced tomato and roll it up firmly from the near side.
- Slice it in two and eat at once, before the avocado warms right through.
