- 3 Egg
- 3 Corn tortillas
- 150 g Zucchini
- 10 g Ginger
- ¼ tsp Ground turmeric
- ½ tsp Ground cumin
- ½ tsp Chaat masala
- 2 tsp Garlic-infused olive oil
- 60 g Carrot (optional)
- 60 g Tomato (optional)
- 10 g Cilantro (optional)
Method
- Grate the courgette and carrot on the coarse side of a box grater, then wring the courgette out in your fist over the sink — it carries far more water than it looks like it does.
- Beat the eggs with the turmeric and cumin, and chop the tomato and the ginger as fine as you can be bothered to.
- Warm the garlic-infused oil, give the ginger a few seconds, then in with the grated courgette and carrot for three minutes, until they lose their raw squeak and start to catch on the base.
- Add the tomato and let it break down for two minutes, then pour the eggs in and stir slow figure-eights for three more, until they set in soft curds and no longer look wet.
- While the eggs are setting into curds, put the corn tortillas over a second burner and turn each one once, until they steam and go pliable.
- Dust the bhurji with the chaat masala, tear the coriander over the top and take the pan and the warm tortillas to the table for filling one at a time.
