About Apple Pie

Apple pie is the archetype of American dessert, a spiced apple filling sealed inside a double crust of flaky, butter-rich pastry. Tart apples are essential — they hold their shape through the long bake and keep the filling from collapsing into sweetness — and they're tossed simply with brown sugar and cinnamon so the fruit stays the star. The defining pleasure is the interplay of textures: a crisp, deeply browned top and bottom crust giving way to tender, syrupy apples beneath, with an egg wash lending the lid its glossy, burnished finish.

A whole pie serves a crowd, which is why it anchors holiday tables and family gatherings, traditionally cut into wedges and served warm, often with vanilla ice cream or a wedge of sharp cheddar in the American style. This version runs about ninety minutes, most of it hands-off baking and a crucial thirty-minute chill for the dough that keeps the butter cold so the crust bakes up flaky rather than tough. Just as important is cooling the finished pie before slicing, which lets the filling set so each piece holds its shape instead of running across the plate.
