  • 150 g Lamb
  • 1 Low-carb tortillas
  • 40 g Greek yogurt
  • 40 g Cucumber
  • 1 clove Garlic
  • ½ Lemon
  • 1 tbsp Olive oil
  • 8 g Mint (optional)
  • ½ tsp Dried oregano (optional)

Method

  1. Slice the lamb across the grain no thicker than a coin and turn the strips through the dried oregano until every one of them is coated.
  2. Leave the lamb in its oregano on the counter for fifteen minutes. Meat taken straight from the fridge to the pan greys instead of browning, and the oregano needs the time to bed in.
  3. Grate the cucumber coarsely and wring it out in your palms until no more water comes, then beat the dry shreds into the Greek yoghurt with the crushed garlic, the shredded mint and the lemon juice.
  4. Get the olive oil shimmering in a heavy pan and throw the lamb in all at once, then keep it moving for six minutes so the strips catch at their edges rather than stewing in the fat they let go.
  5. While the lamb browns, press the low-carb tortilla flat onto a dry pan over a low flame, a minute a face. It is stiffer than a wheat wrap and will not fold cold.
  6. Spread the tzatziki over the warm tortilla, pile the lamb along the lower third with whatever fat is left in the pan, and roll it up tight from the bottom edge.
  7. Cut it once across the middle and start with the cut ends, before the tzatziki warms through.
