About Arroz Caldoso
Arroz caldoso is the brothy, soupier member of Spain's rice family — where paella is dry and arroz al horno is baked, caldoso is deliberately kept loose and wet, served almost like a stew. This version pairs bomba rice with browned chicken thighs, bell pepper, and tomato, seasoned with the classic Spanish backbone of smoked paprika and saffron. Cooking the tomato and paprika down into a jammy sofrito base builds deep savory flavor before the rice goes in, and the generous stock keeps everything brothy so the finished dish is spoonable, warming, and rich with chicken.
Because it's meant to stay loose, arroz caldoso is ladled into deep bowls rather than plated, making it a comforting cold-weather main that eats somewhere between a rice dish and a soup. Browning the chicken thighs first is what gives the broth its depth, their rendered flavor seasoning the whole pot. The key with any bomba-rice dish is to keep enough hot stock going so the rice cooks tender while the liquid stays abundant — only a brief rest is needed before serving, since the goal here is brothiness, not the dry, rested grains of a paella.
