Ingredients

  • 1 Low-carb tortillas
  • 2 Egg
  • 50 g Bacon
  • 1 tsp Olive oil
  • 70 g Avocado (optional)
  • 25 g Cheddar cheese (optional)
  • 1 tsp Hot sauce (optional)

Method

  1. Cut the bacon across into short lardons, break the two eggs into a bowl and beat them, and slice the avocado thickly straight out of its skin.
  2. Start the bacon in a cold pan and bring it up to heat slowly over six minutes, until the fat has run out and the pieces snap rather than bend. Lift them onto a plate and leave the fat where it is.
  3. Turn the heat right down, pour the eggs into the bacon fat and drag them across the pan with a spatula until they gather into big soft curds. They carry on cooking off the heat, so stop early.
  4. While the eggs are coming together, warm the low-carb tortilla in a second dry pan until it relaxes and stops holding its curve.
  5. Lay the eggs across the warm tortilla, scatter the bacon and the grated cheddar over them, fan the avocado on top and shake on the hot sauce. Fold in the ends and roll it tight.
  6. Add the olive oil to the pan and toast the parcel on its seam for two minutes, then roll it over once — the melting cheddar is what glues the wrap shut.
  7. Cut it in half and eat it out of hand while the cheese still pulls.
