About Bacon and Egg Fried Rice
Bacon and egg fried rice is a fast, forgiving take on the Chinese home-cooking staple, the kind of dish built to turn leftovers into a meal in minutes. Its clever economy is cooking the rice in rendered bacon fat, so the smoky, salty drippings season every grain instead of going to waste. Crisp diced bacon, softly scrambled egg, and a little onion and garlic go in alongside, with soy sauce and black pepper doing the final seasoning. As the note flags, day-old rice is best because chilled, dried-out grains fry up separate and toasty rather than clumping into a sticky mass.
The eating is all about contrast: crisp shards of bacon, tender folds of egg, and rice with a light chew and a savory, smoky backbone from the fat and soy. It's quick, generous, and endlessly adaptable, equally suited to a fast lunch, a weeknight dinner, or a late snack, and easily stretched with whatever vegetables you have. The whole thing takes about fifteen minutes. The two moves that make it work are rendering the bacon until genuinely crisp and cranking the heat once the rice goes in, so it heats through and picks up a faint toasted edge instead of steaming.
