  • 500 g Potatoes
  • 1 Onion
  • 2 cloves Garlic
  • 1 tsp Salt
  • ½ tsp Black pepper
  • ½ tsp Smoked paprika (optional)

Method

  1. Dice the bacon, potatoes (1 cm), and onion. Mince the garlic.
  2. Render the bacon in a wide pan over medium for 5 minutes until crisp. Lift to a plate and leave the fat.
  3. In the fat, fry the potatoes covered for 10 minutes, stirring once or twice. Uncover, add the onion, paprika, salt, and pepper, and cook 6 more minutes uncovered until crisp.
  4. Stir the garlic and bacon back through for the last 30 seconds.
  5. Fry the eggs in the same pan and top each plate. Serve hot.
