- 130 g Napa cabbage
- 160 g Chicken thighs
- 8 g Shiso (perilla) leaves
- 8 g Ginger
- 2 tsp Toasted sesame oil
- 1 tbsp Neutral oil
- 1 tsp Light soy sauce (optional)
- 1 tsp Rice vinegar (optional)
- 15 g Scallions (optional)
Method
- Separate seven cabbage leaves and slide them into boiling water for a minute and a half, until they slump. Cool them under the tap and dry them flat.
- Chop the chicken thigh by hand to a coarse mince — a processor turns it to paste and the parcels go dense. Stack the shiso, roll it and cut it into fine ribbons, and grate the ginger.
- Mix the mince with the shiso, ginger, sesame oil and soy until it holds together when squeezed.
- Pare down each thick rib, spoon the filling onto the stem end and fold the leaf over it into a neat packet.
- Sit the packets seam-down in the neutral oil over medium heat for three minutes to colour the base, then add a splash of water and cover. Ten minutes, until the leaf has gone translucent and the chicken is firm right through.
- Scatter the sliced spring onion over and sharpen with the rice vinegar just before eating.
