  • 130 g Napa cabbage
  • 140 g Firm tofu
  • 70 g Kimchi
  • 1 Egg
  • 1 tbsp Toasted sesame oil
  • 1 tbsp Chili oil
  • 1 tsp Gochugaru (optional)
  • 15 g Scallions (optional)

Method

  1. Take seven leaves off the head and blanch them for ninety seconds, until they go limp enough to fold. Refresh them cold and dry them.
  2. Wring the tofu out in a cloth and crumble it. Squeeze the kimchi hard over the sink — wet kimchi will make the parcels weep — then chop it and fold it through the tofu with the gochugaru, the sesame oil and the beaten egg.
  3. Trim the ribs flat, heap the filling at the base of each leaf and roll them into squat parcels.
  4. Lay the parcels in the chilli oil seam-down over a medium flame, three minutes to catch colour, then a splash of water and the lid on for eight, until the egg has set and the parcels hold their shape when lifted.
  5. Tip them onto a plate with the pan's red oil poured over and the spring onions scattered on top.
