  • 140 g Napa cabbage
  • 150 g Ground pork
  • 30 g Chinese chives
  • 8 g Ginger
  • 2 tsp Toasted sesame oil
  • 1 tbsp Chili oil
  • 1 tsp Light soy sauce (optional)
  • 0.13 tsp White pepper (optional)
  • 1 tsp Chinkiang black vinegar (optional)

Method

  1. Pull eight whole leaves off the cabbage head and drop them into boiling water for ninety seconds, until the white ribs bend instead of snapping. Lift them into cold water, then lay them flat on a cloth and pat them properly dry.
  2. Chop the chives short, grate the ginger, and beat both into the pork with the soy, the sesame oil and the white pepper. Work it in one direction until the mixture turns tacky and pulls away from the side of the bowl.
  3. Shave the thick rib off each leaf so it will fold without cracking. Sit a spoon of filling at the stem end, turn the sides in and roll it up into a fat parcel, seam underneath.
  4. Set the parcels seam-down in the chilli oil over a medium flame and leave them four minutes, until the undersides take a blistered brown.
  5. Splash in a few tablespoons of water, clamp the lid on at once and steam eight minutes, until the water has gone and a parcel feels firm when pressed. Cabbage holds far more water than dough, so it needs the lid on longer than a flour dumpling.
  6. Lift them onto a plate crisp side up and spoon the black vinegar over.
