About Baked Brie

Baked brie is a French-style sharing appetizer that takes a whole wheel of soft cheese and warms it until the interior turns molten and pourable. The trick is minimal: the rind is scored in a criss-cross so it can be studded with thin slices of garlic and sprigs of thyme, which perfume the cheese as it heats. A short stint in a moderate oven is all it takes to transform a firm wheel into a scoopable, oozing center while the rind holds it together like an edible bowl.

Eating it is pure indulgence — rich, savory, and gooey, with the garlic and thyme lending a fragrant, herbal lift and a final drizzle of honey adding a sweet, floral edge against the salty cheese. It's meant for the table and for dipping, torn baguette dragged through the warm center while it's still soft. This makes it an ideal party or holiday starter, the kind of thing that anchors a cheese board or a glass of wine. At just over twenty minutes with barely any prep, it delivers a lot of drama for very little work.
