About Baked Feta Pasta
Baked feta pasta is the dish that went viral for good reason: a whole block of feta roasts in a bath of cherry tomatoes and olive oil until the tomatoes burst and the cheese turns soft and golden at the edges. Mashed together, they become an instant sauce — creamy and tangy from the feta, sweet and jammy from the collapsed tomatoes — with no separate sauce-making required. Grated garlic stirred into the hot dish partway through, plus a scatter of chili flakes, sharpens the whole thing so it doesn't read as one-note.
Tossed with hot pasta and a splash of the starchy cooking water, the result clings to every strand: rich, savory, faintly spicy, and rounded out with fresh basil. It's a Mediterranean-leaning weeknight main that feels far more involved than it is, since the oven does the sauce work while the pasta boils. It suits a casual dinner and scales easily for feeding a few people. What makes this version worth cooking is precisely its laziness done right — the technique is nearly foolproof, and reserving that pasta water is the small step that turns roasted cheese and tomatoes into a glossy sauce.
