About Bean & Cheese Burrito

The bean and cheese burrito is the burrito stripped to its essentials — the Tex-Mex and Mexican-American staple in its purest, most economical form. There's no rice, no salsa bar, no pile of add-ons: just seasoned, mashed pinto beans and molten melting cheese rolled tight in a flour tortilla and griddled. What makes it satisfying rather than plain is technique. The beans are warmed with cumin and garlic powder, then roughly mashed to a creamy-but-chunky refried texture that spreads without turning to paste.

Griddling is what elevates it: rolled seam-side down in a lightly oiled skillet, the tortilla crisps and browns while the cheese inside melts into the beans and glues the whole thing shut. Warming the tortillas until pliable first keeps them from cracking as you fold. High in both protein and fiber from the beans, it's a genuinely filling lunch or quick dinner for very little money or effort. Serve it hot with hot sauce for a jolt of acid and heat, and wrapped in foil if you're taking it to go — it holds beautifully.
