Proper Beans on Toast
White beans simmered in a quick tomato sauce, ladled over buttered toast. Better than the tin.

Ingredients
- 1 tin Cannellini beans
- 200 g Canned tomatoes
- 2 slices Bread
- 1 clove Garlic
- ½ tsp Salt
- 20 g Butter (optional)
- ½ tsp Smoked paprika (optional)
- 1 tsp Sugar (optional)
Method
- Thinly slice the garlic clove.
- Soften the sliced garlic in a saucepan with a knob of the butter over medium-low heat until fragrant but not colored.
- Add the canned tomatoes, smoked paprika, sugar, and salt to the pan and stir to combine.
- Simmer the sauce, stirring now and then, until thickened into a loose sauce, about 5 minutes.
- Stir in the drained beans and simmer until hot through and the sauce coats them, about 5 minutes.
- While the beans warm, toast the bread until golden, then spread it with the remaining butter.
- Ladle the beans over the buttered toast and eat with a knife and fork, as is right.

About Proper Beans on Toast
Beans on toast is a cornerstone of British comfort eating, usually a can of baked beans dumped over toast in under five minutes. This 'proper' version rebuilds the beans from scratch and is genuinely better than the tin: cannellini beans simmered in a quick tomato sauce built on garlic gently softened in butter, seasoned with smoked paprika, a pinch of sugar, and salt. The beans stay whole and creamy rather than turning to the uniform mush of the canned stuff, and the sauce clings loosely instead of running.
The smoked paprika is the quiet upgrade, lending a savory, faintly smoky depth that the tinned version never has, while the touch of sugar balances the tomato's acidity the way commercial beans do but with more control. It comes together in about twenty minutes, most of it unattended simmering, so it stays weeknight-easy. Ladle the beans over thickly buttered toast — good bread matters here — and eat it with a knife and fork. It's breakfast, but equally a lazy lunch or a late-night supper, and it's vegan if you swap the butter for oil.
