Za'atar Egg and Avocado Wrap with Halloumi

- 1 Low-carb tortillas
- 2 Egg
- 90 g Avocado
- 40 g Halloumi
- 1 tsp Za'atar
- 1½ tsp Olive oil
- 5 g Mint (optional)
Method
- Crush the avocado roughly with a fork, tear the mint through it and stir in half the za'atar — leave it coarse, not smooth.
- Cut the halloumi into two flat slabs and beat the eggs with what is left of the za'atar.
- Put the olive oil in a small nonstick pan over medium heat and fry the halloumi slabs for two minutes a side until they blister and squeak.
- Slide the halloumi to one edge, pour the beaten eggs into the cleared space and pull them into soft folds for two minutes. Take the pan off while the eggs still look a shade underdone — they carry on setting inside the wrap.
- As the eggs set, hold the low-carb tortilla over a low flame in a second pan for a minute a side; it goes from brittle to bendy quite suddenly.
- Spread the za'atar avocado down the middle of the tortilla, spoon the eggs along it, lay the halloumi slabs over and fold the near edge in before rolling it tight.
- Cut it once on the diagonal so the egg shows at the end, and eat it before the halloumi firms up again.
