About Jeyuk Bibimbap (Spicy Pork Bibimbap)
This is a spicy pork take on bibimbap, Korea's iconic mixed rice bowl whose name literally means 'mixed rice.' The dish is a canvas: a mound of short-grain rice topped with an array of separately prepared components — here caramelized gochujang pork, seasoned spinach and bean sprouts, julienned carrot, and a fried egg — all meant to be stirred together at the table. The pork stands in for the raw beef or bulgogi of more familiar versions, stir-fried with gochujang until it turns sticky, spicy, and deeply savory.
The joy of bibimbap is in the mixing: you break the runny yolk and fold everything through the rice so each spoonful carries a bit of chewy pork, crisp vegetable, and glossy chili paste. The result is a balance of textures and temperatures — hot rice, warm pork, cool-dressed greens — with the gochujang bringing sweet heat and the sesame oil in the vegetables lending a nutty perfume. Traditionally the dolsot version is served in a screaming-hot stone bowl that crisps the bottom layer of rice into golden nurungji, though it is just as satisfying in a regular bowl. It is a complete, colorful one-bowl meal, easily portioned for a family and adjusted for heat to taste.
