About Black Bean Chicken
Black bean chicken is a Cantonese-style stir-fry built on douchi, the salty fermented black soybeans that give so much of southern Chinese cooking its deep, savory funk. Here they arrive as a fermented black bean sauce that clings to quick-cooked chicken thighs and sweet bell pepper, sharpened with garlic and ginger and lifted at the end with scallions. It's a fast, punchy dish that shows off the intensity of fermentation: a little of that black bean sauce carries a big, almost meaty umami that makes the whole pan taste long-simmered even though it isn't.
The flavor is savory and aromatic with a glossy, slightly sweet finish, the chicken thighs staying juicy while the pepper keeps a bit of crunch. It's the kind of thing you want over steamed rice, which soaks up the sauce, and it makes an easy weeknight dinner for two. This version is genuinely quick, around twenty minutes, and it follows sound stir-fry order: the chicken sears first, the aromatics go in once it's nearly done so they don't scorch, and the sauce and pepper come last so everything turns glossy without overcooking. The sugar is there to balance the saltiness of the fermented beans, which is the small adjustment that keeps the dish rounded rather than harsh.
