Beef Stroganoff
Seared beef and mushrooms in a creamy mustard sauce.

Ingredients
- 500 g Beef flank steak
- 300 g Button mushrooms
- 1 Onion
- 150 ml Creme fraiche
- 40 g Butter
- ¾ tsp Salt
- 1 tbsp Dijon mustard (optional)
- 80 ml White wine (optional)
- 3 tbsp Parsley (optional)
Method
- Slice the beef into thin strips and slice the mushrooms and onion.
- Sear the beef hard in the butter over high heat until browned but still pink within, then season with salt and set aside.
- Brown the mushrooms and onion in the same pan until golden, then pour in the wine and scrape up any browned bits from the bottom.
- Stir in the creme fraiche and mustard and let the sauce warm through.
- Return the beef and any juices to the pan and warm through without boiling.
- Scatter parsley over and serve over rice or noodles.
