  • 170 g Monkfish
  • 250 ml Fish stock
  • 4 cloves Garlic
  • 1 Egg yolk
  • 35 ml Olive oil
  • ⅛ tsp Salt
  • 80 g Fennel bulb (optional)
  • 40 ml White wine (optional)
  • 1 sprig Thyme (optional)
  • 1 Bay leaves (optional)
  • ¼ tsp Black pepper (optional)

Method

  1. Slice the fennel into thin fans, cut the monkfish into thick medallions and season them with the salt and pepper.
  2. Bring the stock, wine, fennel, thyme and bay leaf up to a slow simmer and let the broth take everything on.
  3. While the broth infuses, pound the garlic to a smooth paste in a mortar, work the egg yolk in, then trickle the olive oil down the pestle until the aioli stands up on its own.
  4. Slip the monkfish into the broth and poach it below the boil until the flesh turns from glassy to chalk white.
  5. Lift the fish onto a warm plate. Off the heat, beat a ladleful of hot broth into the aioli, tip it back into the pot and stir until the soup coats the spoon like thin cream, never letting it boil.
  6. Sit the monkfish in a wide bowl and pour the thickened broth around it.
