- 170 g Monkfish
- 250 ml Fish stock
- 4 cloves Garlic
- 1 Egg yolk
- 35 ml Olive oil
- 0.1 tsp Salt
- 80 g Fennel bulb (optional)
- 40 ml White wine (optional)
- 1 sprig Thyme (optional)
- 1 Bay leaves (optional)
- ¼ tsp Black pepper (optional)
Method
- Slice the fennel into thin fans, cut the monkfish into thick medallions and season them with the salt and pepper.
- Bring the stock, wine, fennel, thyme and bay leaf up to a slow simmer and let the broth take everything on.
- While the broth infuses, pound the garlic to a smooth paste in a mortar, work the egg yolk in, then trickle the olive oil down the pestle until the aioli stands up on its own.
- Slip the monkfish into the broth and poach it below the boil until the flesh turns from glassy to chalk white.
- Lift the fish onto a warm plate. Off the heat, beat a ladleful of hot broth into the aioli, tip it back into the pot and stir until the soup coats the spoon like thin cream, never letting it boil.
- Sit the monkfish in a wide bowl and pour the thickened broth around it.
