  • 4 Egg
  • 1 Potatoes
  • 60 g Melting cheese
  • 2 tbsp Neutral oil
  • ¾ tsp Salt
  • ½ tsp Smoked paprika (optional)
  • 1 tbsp Hot sauce (optional)

Method

  1. Dice the potato small, into half-centimeter cubes so they crisp fast.
  2. Beat the eggs in a bowl with a pinch of the salt.
  3. In a skillet over medium-high, heat the neutral oil until it shimmers.
  4. Fry the diced potato with the remaining salt and the smoked paprika, tossing now and then, until browned and tender, about 10 minutes.
  5. Push the potatoes to one side, pour in the beaten eggs, and scramble softly until just set.
  6. Warm the tortillas in a dry pan or directly over the flame for a few seconds a side.
  7. Pile the potato-egg filling and the cheese along the center of each tortilla.
  8. Fold in the sides and roll each tortilla tight, then set seam-side down in the pan for a minute to seal.
  9. Halve each burrito and serve with hot sauce.
