About Breakfast Quesadilla
A breakfast quesadilla takes the familiar griddled-tortilla format and turns it toward morning: scrambled eggs and melting cheese pressed between crisp tortillas until the outside is golden and the inside molten. It's a Mexican-inspired quick bite that trades the burrito's roll for a flat, pan-crisped package you cut into wedges and eat with your fingers. Scallions add a fresh, mild onion bite that cuts the richness, and hot sauce brings the heat on the side.
The technique is what keeps it from turning greasy or dense: the eggs are scrambled soft and set aside first, then layered between two tiers of cheese so the melt glues the whole thing together as it crisps. Cooking it slowly enough to brown both sides while the cheese melts is the key move — rush it and the tortilla scorches before the middle gives way. Ready in about fifteen minutes with a short ingredient list, it's an ideal fast breakfast or late-night snack, and the wedges make it easy to share.
