About Buffalo Wings

Buffalo wings are the American bar-food classic that traces to Buffalo, New York, where the idea of tossing fried chicken wings in a sauce of hot sauce and butter first caught on. The dish is defined by that glaze more than anything else: a cayenne-forward hot sauce emulsified with melted butter, which tames the vinegar bite and gives the coating its signature clingy, glossy richness.

This version skips the deep fryer and roasts the wings instead, tossing them first with baking powder, which raises the skin's pH and dries it out so it blisters and crisps in a hot oven. The result is genuinely crunchy skin under a tangy, buttery, moderately spicy glaze, with the meat staying juicy inside. Wings like these are made to be eaten hot and immediately, straight from the pan, and they're the default for game day, a party platter, or a low-carb snack served with celery and a blue cheese or ranch dip.
