  • 55 g Rice vermicelli
  • 200 g White fish fillet
  • 8 g Dill
  • ½ tsp Ground turmeric
  • 1 tsp Garlic-infused olive oil
  • ½ Lemon
  • 70 g Carrot (optional)
  • 80 g Cucumber (optional)

Method

  1. Cut the fish into thick chunks and turn them through the turmeric until evenly stained. Peel the carrot and cucumber into ribbons and cut the dill into short lengths, stalks and all.
  2. Warm the garlic-infused oil over a medium flame and lay the fish in without crowding. Five minutes, turning once, until the turmeric has gone from raw yellow to a deep gold and the flesh parts easily.
  3. Pile the dill on top of the fish and cover for one minute — it should collapse into the oil and go silky rather than crisp, which is the whole character of the dish.
  4. Pour just-boiled water over the rice vermicelli and leave it four minutes, until the strands bend without breaking, then drain and rinse cold.
  5. Pile the cold noodles into a bowl with the carrot and cucumber ribbons, spoon the fish and all its dill-yellow oil over the top, and squeeze on the lemon.
