  • 55 g Rice vermicelli
  • 200 g Chicken breast
  • 15 g Lemongrass
  • 2 tsp Tamarind paste
  • 70 g Carrot
  • 100 g Cucumber
  • 1 tsp Garlic-infused olive oil
  • ½ Lime
  • 8 g Mint
  • 1 Thai chilies (optional)
  • 10 g Ginger (optional)
  • ½ tsp Fish sauce (optional)

Method

  1. Bruise the lemongrass along its length with the back of a knife until it splits and smells sharp — sliced fine it stays woody, crushed it gives everything up to the water.
  2. Sit the chicken in a small pan with the lemongrass and sliced ginger, cover it with cold water and hold it at a bare shiver for fifteen minutes. A rolling boil pulls the meat into strings.
  3. Lift the breast out, let it stop steaming and pull it along the grain into thick ropes.
  4. Peel the carrot and cucumber into long ribbons. Loosen the tamarind in the lime juice with the fish sauce and the ringed chilli, and pick the mint leaves.
  5. Pour just-boiled water over the rice vermicelli and leave it four minutes, until the strands bend without breaking, then drain and rinse them cold.
  6. Pile the cold noodles into a bowl with the vegetable ribbons and the chicken, trickle over the garlic-infused oil, pour the tamarind dressing across at the table and tear the mint on top.
