About Bun Rieu
Bun rieu is a beloved Vietnamese noodle soup built around a bright, tomato-red broth and delicate clouds of protein, here made with shrimp and egg blended into a light paste. The dish is defined by its tang and its texture: tamarind and tomato give the broth a sour, fruity edge, while spoonfuls of the shrimp-egg mixture set into soft, tender curds that float through the soup.
Fried shallot and tomato give the base a savory sweetness before stock, tamarind, and fish sauce round it into something both refreshing and deeply umami. Served over rice vermicelli with a generous handful of herbs, it eats light and high in volume yet satisfying, which makes it a good choice when you want a soup that feels nourishing rather than heavy. It's an everyday bowl in Vietnam, equally at home for lunch or a lighter dinner.
