- 450 g Firm tofu
- 7 Tomato
- 200 g Rice vermicelli
- 100 g Bean sprouts
- 2 Shallot
- 2 tbsp Neutral oil
- 2 Egg (optional)
- 100 g Water spinach (optional)
- 1 tbsp Tamarind paste (optional)
- 1 tbsp Light soy sauce (optional)
Method
- Soak the rice noodles in hot water until soft, then drain; crumble the tofu.
- Fry the shallot, add the grated tomato, and cook into a rich sauce, 8 minutes.
- Add water, the tamarind, and soy to make a broth, stir in the tofu and beaten egg, and simmer 8 minutes.
- Ladle over the noodles with bean sprouts and water spinach.
