  • 450 g Firm tofu
  • 7 Tomato
  • 200 g Rice vermicelli
  • 100 g Bean sprouts
  • 2 Shallot
  • 2 tbsp Neutral oil
  • 2 Egg (optional)
  • 100 g Water spinach (optional)
  • 1 tbsp Tamarind paste (optional)
  • 1 tbsp Light soy sauce (optional)

Method

  1. Soak the rice noodles in hot water until soft, then drain; crumble the tofu.
  2. Fry the shallot, add the grated tomato, and cook into a rich sauce, 8 minutes.
  3. Add water, the tamarind, and soy to make a broth, stir in the tofu and beaten egg, and simmer 8 minutes.
  4. Ladle over the noodles with bean sprouts and water spinach.
