- 50 g Rice vermicelli
- 200 g Shrimp
- 80 g Carrot
- 100 g Cucumber
- 1 tsp Garlic-infused olive oil
- 1 Lime
- ½ tsp Fish sauce (optional)
- 8 g Mint (optional)
- 8 g Cilantro (optional)
Method
- Cut the carrot and cucumber into long ribbons with a peeler, and pick the mint and coriander leaves. Blot the prawns dry.
- Whisk the fish sauce with the juice of the whole lime and two spoonfuls of water — the dressing should taste sharper than seems right, because the noodles will blunt it.
- Pour just-boiled water over the rice vermicelli and leave it four minutes, until the strands are pliable but still have a little resistance, then drain and rinse it cold.
- Sear the prawns in the garlic-infused oil over a high flame, ninety seconds a side, until they curl tight and lose their grey.
- Pile the cold vermicelli into a bowl, lay the carrot and cucumber ribbons over it with the hot prawns, scatter the herbs and pour the dressing over at the table.
