- 600 g White fish
- 40 g Ginger
- 5 Scallions
- 2 tbsp Light soy sauce
- 2 tbsp Neutral oil
- 15 g Cilantro (optional)
- 1 Lime (optional)
Method
- Score the fish and lay half the ginger and scallion under and over it.
- Steam the fish over simmering water until the flesh flakes, 14 minutes.
- Pile the remaining ginger and scallion on top and pour over the oil heated to smoking.
- Finish with the soy, a squeeze of lime, and cilantro.
