Ingredients

  • 300 g Sweet potato
  • 200 g Taro
  • 250 g Firm tofu
  • 2 Carrot
  • 2 Lemongrass
  • 200 ml Coconut milk
  • 2 tbsp Red curry paste
  • 1 Onion
  • 3 cloves Garlic
  • 2 tbsp Neutral oil
  • ½ tsp Salt

Method

  1. Cube the sweet potato, taro, carrot, and tofu; bruise the lemongrass.
  2. Fry the onion, garlic, and curry paste in the oil until fragrant, 4 minutes.
  3. Add the vegetables, lemongrass, salt, and water and simmer until nearly tender, 18 minutes.
  4. Pour in the coconut milk, add the tofu, simmer 6 minutes, and serve.
