- 300 g Sweet potato
- 200 g Taro
- 250 g Firm tofu
- 2 Carrot
- 2 Lemongrass
- 200 ml Coconut milk
- 2 tbsp Red curry paste
- 1 Onion
- 3 cloves Garlic
- 2 tbsp Neutral oil
- ½ tsp Salt
Method
- Cube the sweet potato, taro, carrot, and tofu; bruise the lemongrass.
- Fry the onion, garlic, and curry paste in the oil until fragrant, 4 minutes.
- Add the vegetables, lemongrass, salt, and water and simmer until nearly tender, 18 minutes.
- Pour in the coconut milk, add the tofu, simmer 6 minutes, and serve.
