- 400 g Chicken thighs
- 3 Zucchini
- 200 g Corn kernels
- 3 Tomato
- 1 Onion
- 1 Green chili
- 3 cloves Garlic
- 2 tbsp Extra-virgin olive oil
- 1 tsp Ground cumin
- ½ tsp Salt
- 3 tbsp Cilantro (optional)
Method
- Dice the chicken into bite-size pieces; dice the zucchini, onion, and tomato and mince the garlic and chili.
- Brown the chicken in the oil over high heat, then push to the side.
- Add the onion, garlic, chili, and cumin and cook until fragrant.
- Stir in the zucchini, corn, tomato, and salt, cover, and simmer until the zucchini is tender, 10 minutes.
- Taste, finish with cilantro, and serve.
