Ingredients

  • 600 g Shrimp
  • 6 cloves Garlic
  • 1 Guajillo chilies
  • 3 tbsp Extra-virgin olive oil
  • 2 Lime
  • 0.4 tsp Salt
  • 3 tbsp Cilantro (optional)
  • 300 g Green beans (optional)

Method

  1. Bring a pot of water to a boil and blanch the green beans until just tender, 4 minutes, then drain.
  2. Thinly slice the garlic and snip the dried chili into flecks, discarding the seeds.
  3. Warm the oil with the garlic and chili over medium heat until the garlic turns pale gold and fragrant.
  4. Raise the heat, add the shrimp, and toss until pink and just firm, about 3 minutes.
  5. Squeeze in the lime, fold through the beans, and scatter the cilantro.
