- 600 g Shrimp
- 6 cloves Garlic
- 1 Guajillo chilies
- 3 tbsp Extra-virgin olive oil
- 2 Lime
- 0.4 tsp Salt
- 3 tbsp Cilantro (optional)
- 300 g Green beans (optional)
Method
- Bring a pot of water to a boil and blanch the green beans until just tender, 4 minutes, then drain.
- Thinly slice the garlic and snip the dried chili into flecks, discarding the seeds.
- Warm the oil with the garlic and chili over medium heat until the garlic turns pale gold and fragrant.
- Raise the heat, add the shrimp, and toss until pink and just firm, about 3 minutes.
- Squeeze in the lime, fold through the beans, and scatter the cilantro.
