Camarones a la Diabla
Shrimp in a fiery guajillo-chipotle sauce over sautéed greens. Big protein, low carb, no sugar.

Ingredients
- 600 g Shrimp
- 3 Tomato
- 3 Guajillo chilies
- 1 Chipotles in adobo
- 3 cloves Garlic
- 1 Onion
- 200 g Spinach
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
- 1 Lime (optional)
Method
- Toast the guajillos in a dry pan, then soak in hot water 10 minutes until soft.
- Blitz the soaked chilies with the tomato, chipotle, half the onion, and the garlic to a smooth sauce.
- Fry the remaining sliced onion in the oil, pour in the sauce with the salt, and simmer until thick, 6 minutes.
- Add the shrimp and cook until pink and just firm, 3 minutes.
- Wilt the spinach in a separate pan and serve the shrimp over it with a squeeze of lime.
