Ingredients

  • 600 g Shrimp
  • 3 Tomato
  • 3 Guajillo chilies
  • 1 Chipotles in adobo
  • 3 cloves Garlic
  • 1 Onion
  • 200 g Spinach
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 1 Lime (optional)

Method

  1. Toast the guajillos in a dry pan, then soak in hot water 10 minutes until soft.
  2. Blitz the soaked chilies with the tomato, chipotle, half the onion, and the garlic to a smooth sauce.
  3. Fry the remaining sliced onion in the oil, pour in the sauce with the salt, and simmer until thick, 6 minutes.
  4. Add the shrimp and cook until pink and just firm, 3 minutes.
  5. Wilt the spinach in a separate pan and serve the shrimp over it with a squeeze of lime.
