About Canh Chua
Canh chua is a Vietnamese sweet-and-sour soup from the country's south, where the Mekong Delta's abundance of fish, tamarind, and fresh herbs shaped the region's cooking. The name literally means 'sour soup,' and the defining move is the broth: stock loosened with tamarind for tartness and balanced with fish sauce and a little sugar, so the base lands somewhere between tangy, savory, and gently sweet. Chunks of white fish poach in it just until barely done, while tomato adds acidity and color and bean sprouts, stirred in at the very end, stay crisp. It's a light, brothy soup rather than a heavy one, built for a hot climate.
Eaten, it's bright and refreshing, with the sour tamarind sharpening the delicate fish and a wave of aroma from Thai basil scattered over the top. In Vietnam it rarely stands alone; it's ladled out as part of a shared meal alongside steamed rice and often a caramelized clay-pot fish, so the soup and the rice play off each other. This version keeps the ingredient list streamlined but holds onto what matters, the tamarind-forward broth and the last-minute herbs and sprouts that give it life. At about thirty minutes it's a quick weeknight soup, and the gentle poaching keeps the fish tender.
