  • 700 g Beef flank steak
  • 3 Lime
  • 4 cloves Garlic
  • 5 tbsp Cilantro
  • 12 Corn tortillas
  • 1 Onion
  • 3 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • 1 tsp Ground cumin (optional)

Method

  1. Blend a marinade of lime juice, garlic, half the cilantro, cumin, oil, and salt, then coat the flank steak all over.
  2. Leave the steak to marinate at least 20 minutes; meanwhile finely dice the onion.
  3. Grill the steak over high heat to a good char on both sides, then rest and slice thinly against the grain.
  4. Warm the tortillas on a dry pan until soft and lightly toasted.
  5. Fill the warm tortillas with steak, diced onion, and the remaining cilantro.
