Ingredients

  • 500 g Beef flank steak
  • 500 g Cauliflower
  • 200 g Black beans
  • 1 Avocado
  • 2 Lime
  • 3 cloves Garlic
  • 1 tsp Ground cumin
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 4 tbsp Cilantro (optional)

Method

  1. Rub the steak with the grated garlic, cumin, salt, and the juice of one lime; leave to sit while you prep.
  2. Pulse the cauliflower to rice-size grains and warm through in the oil with a pinch of salt until tender, 6 minutes.
  3. Warm the black beans in a small pan.
  4. Sear the steak over high heat, 3 minutes a side for medium, then rest and slice thin.
  5. Build bowls of cauliflower rice, beans, sliced steak, and avocado; finish with cilantro and the second lime.
