- 200 g Konjac rice
- 180 g Beef sirloin
- 80 g Avocado
- 1½ tbsp Olive oil
- ½ Lime
- 30 g Cotija (optional)
- 1 tsp Ground cumin (optional)
- 1 Jalapeno (optional)
- 10 g Cilantro (optional)
Method
- Pat the steak dry and rub it with the cumin, salt and pepper. Slice the avocado and jalapeno, and chop the coriander.
- Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
- Get a heavy pan smoking hot with the olive oil and sear the steak for 3 minutes a side for medium-rare, pressing it down so the whole face touches the pan.
- Move the steak to a board and leave it to rest for 4 minutes — cutting it now would lose all the juice.
- Spread the konjac rice on a plate. Slice the rested steak thinly across the grain and lay it over, pouring on any juice from the board. Add the avocado and jalapeno, crumble over the cotija and squeeze the lime across. Finish with coriander.
