Ingredients

  • 1 Low-carb tortillas
  • 180 g Beef sirloin
  • 90 g Avocado
  • 1½ tbsp Olive oil
  • ¼ Lime
  • 30 g Cotija (optional)
  • 1 Jalapeno (optional)
  • 1 tsp Ground cumin (optional)
  • 10 g Cilantro (optional)

Method

  1. Pat the steak dry and rub it with the cumin, salt and pepper. Mash the avocado with the lime juice, slice the jalapeno and chop the coriander.
  2. Get a heavy pan smoking hot with the olive oil and sear the steak for 3 minutes a side for medium-rare, pressing it flat so the whole face touches the pan.
  3. Move the steak to a board and leave it to rest 4 minutes — slicing it now would empty it of juice.
  4. While the steak rests, warm the low-carb wrap in a dry pan for a minute a side until it is soft enough to fold without cracking.
  5. Spread the mashed avocado over the warm wrap, slice the rested steak thinly across the grain and lay it down the middle with any juices from the board. Crumble over the cotija, add the jalapeno and coriander, and roll it up tight.
  6. Cut in half on the diagonal and eat straight away, while the steak is still warm.
