  • 800 g Carrot
  • 1 Onion
  • 3 cloves Garlic
  • 2 tbsp Ginger
  • 800 ml Chicken stock
  • 30 g Butter
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 80 ml Heavy cream (optional)
  • 1 tsp Honey (optional)

Method

  1. Heat the oven to 220°C (425°F).
  2. While the oven heats, chop the carrots into 3 cm chunks and toss them with the oil, salt, and pepper on a tray.
  3. Roast the carrots until tender and caramelised at the edges, about 20 minutes.
  4. Meanwhile, chop the onion and mince the garlic and ginger.
  5. Soften the onion in the butter over medium for 6 minutes; add the garlic and ginger for 1 minute more.
  6. Tip in the roasted carrots and pour over the stock. Simmer for 10 minutes.
  7. Blitz smooth, then stir in the cream and honey if using. Adjust the seasoning. Serve hot.
