About Cashew Chicken
Cashew chicken is a takeout-classic Chinese-American stir-fry, pairing tender bites of chicken with toasted cashews and sweet peppers in a glossy savory sauce. The technique is straightforward wok cooking, but two details do the heavy lifting: the chicken is tossed in cornstarch before cooking, which velvets it so the surfaces stay silky and the sauce clings, and the cashews are toasted dry first so they keep their crunch and nutty depth instead of going soft in the pan.
The finished dish tastes savory and lightly sweet, built on oyster and soy sauce with a whisper of sugar, and the pleasure is in the textures — juicy chicken, crisp-tender pepper, and those buttery toasted cashews folded in at the end. It's fast, high-protein food that's tailor-made for a weeknight; from cutting board to bowl it's around twenty minutes. Serve it over steamed rice to soak up the sauce, and it needs nothing else, though a scattering of scallion or a little chili would be at home.
