Chicken Congee
Silky rice porridge with poached chicken and ginger.

Ingredients
- 150 g Jasmine rice
- 300 g Chicken
- 1 Ginger
- 3 Scallions
- 1 tbsp Light soy sauce
- 1 tsp Salt
- 1 tbsp Toasted sesame oil (optional)
- ½ tsp White pepper (optional)
Method
- Rinse the rice under cold water until it runs clear.
- Thinly slice the ginger and the scallions.
- In a large pot, combine the rice, chicken, ginger, and salt with plenty of water. Bring to a boil, then simmer on low, stirring occasionally, until the rice breaks down into a silky porridge.
- Lift out the chicken, shred it with two forks, then stir it back through the congee.
- Finish each bowl with light soy, sesame oil, white pepper, and the sliced scallions and serve.
