Chao Shou in Chilli Broth
Pork and prawn wontons dropped into their own simmering stock, finished with chilli oil.

Ingredients
- 10 Dumpling wrappers
- 90 g Ground pork
- 80 g Shrimp
- 300 ml Chicken stock
- 100 g Bok choy
- 10 g Ginger
- 2 tsp Light soy sauce
- 1 tsp Chili oil
- 20 g Scallions (optional)
- 1 tsp Toasted sesame oil (optional)
- ⅛ tsp White pepper (optional)
Method
- Grate the ginger, slice the scallions thin and split the bok choy lengthways.
- Chop the prawns and beat them into the pork with half the ginger, the soy, sesame oil and white pepper until the mix pulls away from the side of the bowl.
- While you wrap, bring the stock up with the rest of the ginger, then drop it to the barest tremble and leave it there to hold.
- Sit a small spoon of filling on each wrapper, damp two edges and fold it into a loose triangle, then bring the long corners together and pinch — chao shou want folds, not a tight parcel, so they trail in the broth.
- Bring the broth back to a simmer, slide the wontons in with the bok choy and cook them until they surface and the filling is firm through the wrapper.
- Ladle everything into a deep bowl, spoon the chilli oil over and scatter the scallions.
