  • 800 g Pork shoulder
  • 120 ml Char siu sauce
  • 2 tbsp Honey
  • 2 tbsp Shaoxing wine
  • 1 tbsp Dark soy sauce
  • 3 cloves Garlic

Method

  1. Cut the pork into long thick strips and mince the garlic.
  2. Coat the pork in the char siu sauce, wine, and dark soy and rest at least 30 minutes.
  3. Heat the oven to 200°C (400°F).
  4. Roast the pork until cooked through and caramelised, turning once, about 30 minutes.
  5. Brush the pork with honey and put it under the broiler (or top grill) on high until sticky and charred at the edges.
  6. Rest a few minutes, then slice and serve.
