- 70 g Fusilli
- 320 g Chicken breast
- 340 g Asparagus
- 140 g Green beans
- 8 ml Garlic-infused olive oil
- 1 tbsp Salt
- 1 Lemon (optional)
- 10 g Parmigiano-Reggiano (optional)
- ½ tsp Black pepper (optional)
Method
- Bring a pot of water to a boil. Salt it.
- Cut the chicken into bite-size pieces and season with salt and pepper. Trim the asparagus and green beans and cut into 2-inch lengths.
- Zest the lemon.
- Cook the fusilli one minute shy of al dente.
- While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium-high heat. Sear the chicken until golden and cooked through, about 5 minutes, then push to one side of the pan.
- Add the asparagus and green beans to the pan and cook, tossing, until bright green and just tender, about 4 minutes.
- Reserve a mugful of pasta water, then drain.
- Tip the pasta into the pan with the lemon zest and a splash of pasta water. Toss off heat until glossy.
- Finish with the parmesan and a squeeze of lemon juice.
