- 64 g Fusilli
- 280 g Chicken breast
- 400 g Cherry tomatoes
- 35 ml Garlic-infused olive oil
- 1 tbsp Salt
- 1 bunch Basil (optional)
- 20 g Parmigiano-Reggiano (optional)
- ½ tsp Black pepper (optional)
Method
- Bring a pot of water to a boil. Salt it.
- Cut the chicken into bite-size pieces and season with salt and pepper. Halve the cherry tomatoes.
- Tear the basil leaves.
- Cook the fusilli one minute shy of al dente.
- While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium-high heat. Sear the chicken until golden and cooked through, about 5 minutes.
- Add the cherry tomatoes to the pan and cook until they blister and slump, about 3 minutes.
- Reserve a mugful of pasta water, then drain.
- Tip the pasta into the pan with a splash of pasta water. Toss off heat until glossy.
- Finish with the basil and parmesan.
