Ingredients

  • 700 g Chicken thighs
  • 2 Onion
  • 2 Tomato
  • 100 ml Coconut milk
  • 1 tbsp Black peppercorns (whole)
  • 1 tbsp Coriander seeds
  • 1 tsp Fennel seeds
  • 12 Curry leaves
  • 1 Ginger
  • 5 cloves Garlic
  • 3 tbsp Neutral oil
  • 1 tsp Salt
  • 240 g Basmati rice

Method

  1. Rinse the basmati rice until the water runs clear, then cook it in twice its volume of water, covered, until tender and the water is absorbed, about 15 minutes.
  2. Dry-roast the peppercorns, coriander, and fennel, then grind to a masala.
  3. Slice the onion and tomato; grate the ginger and garlic.
  4. Fry the curry leaves and onion in oil, then the ginger-garlic, tomato, and ground masala.
  5. Add the chicken and water and simmer until tender, about 25 minutes.
  6. Stir in the coconut milk off heat.
  7. Serve with rice.
